It’s an overcast afternoon in Johannesburg, I’m listening to Zonke singing love songs and the only thing that would make this moment even more perfect, is a glass of Merlot and a serving of my really good Chicken n’ Olives dish..
This is my second installment of my broke chronicles, a foodie with a budget, and this is a meat dish that will impress without hurting your pockets..
I love how all the flavors work so well together without overpowering any other ingredient.
You’ll Need :
1 Tray of chicken pieces (Around R50 for 8 at Checkers)
1 punnet Cherry Tomatoes
1 Bag deseeded black olives
2 Cloves garlic
Salt and pepper
How To :
First, clean and trim your chicken pieces ( I remove the fat from the thighs I just like it better)
Now make sure your chicken is dry, and add salt and pepper. Set aside.
Chop up your garlic, and add to pan with hot olive oil.
Add your chicken and brown on both sides so minimal cooking is done in the oven.
Now we half and add our tomatoes together with the thyme to the chicken in an oven proof dish. Place in an oven at 180degrees for about 30 mins, then add your olives in the last ten minutes.
I absolutely love how simple this dish is, but the flavor is phenomenal.. simple, quick and under R100 for four people to share.
You can serve it with cous cous is really good (just sprinkle a helping of feta and fresh parsley) but equally great with potatoes – mash or roasted, or a good toasted Ciabatta and a glass of red..
