Swiss Meringue Pud..

Happy Friday guys!!

I’m sure everyone is excited to be getting some time off although we just came from a public holiday in South Africa! Women’s day!
I know a lot of people will be spending the weekend,spoiling the women in their lives with a gorgeous Sunday spread. So I thought I’d share a yummy pudding that will impress!
I’ve adapted this recipe from Taste magazine.IMG_2625

You’ll need :
1 Swiss Roll
3 Eggs
250ml Cream
250ml milk
1 Cinnamon stick
Rind of 1 medium orange
Vanilla essence

For Meringue
2 egg whites
1 cup castor sugar

How To :
Slice your Swiss Roll and arrange in baking casserole with the cinnamon stick in the middle!
Mix together your 2 eggs, milk, cream, essence and rind. Pour over Swiss Roll and let stand, then place into a hot oven. (140 degrees) leave in the oven for 30-40 minutes until the custard is set.IMG_2621

Making the meringue:
Place the egg whites in a glass bowl, and start beating with a hand mixer or whisk. Gradually add your sugar until soft peaks form, then scoop out and place on your Swiss Roll. Place under the broiler (top grill in the oven) but be careful, I burnt mine first time around. Just let it brown slightly and then remove. Serve warm with cream or lemon mascarpone.. Enjooooy!
