I’ve been on a baking spree lately, I bake a cake every week and boy have they been good!!
I made the most moist Chocolate cake last week, and my dreamy carrot cake this week! The recipe for the carrot cake is on the blog, and I’ve added different fruit to the recipe and it just gets better! The cake we’re making today is our Orange and Herb cake..
It’s got an incredible syrup that makes it so moist, and a tad sweeter..
The recipe also uses an ingredient most people don’t utilise differently, maize meal!
This adds texture and a sort of “heaviness” to the cake and served with ice cream it is absolutely divine!

You’ll Need :
1 cup oil
1 cup flour
1 cup maize meal
1 1/2 cup Sugar
2 Tsp Baking Powder
How To :
First, get one of your oranges and slice it, put into a saucepan, with your rosemary and safe, and half a cup of sugar.
Add a cup of water and let it boil together, let it boil until it’s about half the liquid then remove from heat.
While the syrup boils, let’s get started on the cake.
Mix your oil and eggs together, and to that add the juice and zest of one orange.
Add your dry ingredients to your liquids and mix well.
Pour into a lined cake tin and bake at 140 for 40 – 50 minutes or until your cake is golden and an inserted toothpick comes out clean.
While still hot and in the tin, make holes with a toothpick and pour your syrup all over it, watch it get soaked into that yumminess!
Once cool, serve with ice cream and enjoy!!
