A lot of my friends are trying this plant based lifestyle, and everyone is commenting on how better they feel, so I thought I’d give it a go too. I’m hoping to incorporate it into my diet at least 4 times a week and then switch up between meat and fish the rest of the time cause we all know I love my meat!
It’s not going to be easy but I’ve started by using more fleshy vegetables that have a meaty texture like aubergine and mushrooms.
Using warm fragrant spices also adds to the depth of the dishes.
Ok let’s get started on this vegetable curry!
1 small onion chopped
1 large garlic clove chopped
1 Medium aubergine chopped
1 cup baby potatoes halved
1 cup frozen peas
1 tin chopped tomatoes
1 tsp garam masala
1/2 tsp smoked paprika
1/2 cayenne pepper
Salt and Pepper
How To :
In a pan, sauté your onion until golden (caramelized onions offer better flavour) then add your garlic.
Follow up with your spices and let them cook for a while before adding your aubergine.
Make sure the spices thoroughly coat your aubergine and then add your potatoes and carrots.
Add your chopped tomatoes and half a can of water you rinsed the can with.
Season with salt and pepper and let simmer on a medium heat for 20 minutes.
After 20 minutes has passed, add your cup of peas and lower heat to very low for about 5 minutes.
Mine was rather spicy (I added more cayenne as I enjoy heat) so I served it with some yogurt and Naan.
You can enjoy this with some rice too.
