Vongole Pasta..

I love pasta, and I love the fact that you don’t always need a rich sauce to make it, so that fits right into my plant/pescaterian lifestyle. (Although I’ll still have a bit of meat now and again)

This clam pasta was my solution for a quick midnight supper!
Its light, flavorful and super quick to make. My speciality.

You’ll Need:
Tagliatelle pasta
400 gm Clam pack
250 ml cream
125 ml white wine
2 Cloves Garlic finely chopped
Half an onion finely chopped
Butter or olive oil
Salt and Pepper

How To:
In a warm pan, saute the garlic and onion until soft, then add your clams and the wine, let the wine simmer then add in your cream and let it reduce. Season with salt and pepper.

In a separate pot, boil your pasta in salt and just before it’s done, remove from the water and add to your clams. Add a little starchy pasta water to loosen up.
Chop fresh chives and parsley to add in and grate in your favorite cheese (Parmesan or Pecorino works well)

Enjoy with a glass of White wine!
