Pork Stew..

Hey family!

Johannesburg weather is being so funny right now, thunderstorms are set for today and tomorrow, but I’ve got the perfect meal to comfort you throughout!
I love cooking with pork because it takes flavor on quite well, and right now is such a cheaper alternative to every meat we have!
I particularly like stews because the amount of vegetables you add “stretch” your meat, and you’re able to feed more people and with this economy, who doesn’t need that?
This stew is hearty, and has a slight heat but isn’t hot..and a sweetness from the vegetables that I enjoy.
Ok let’s get to making dinner..


1 medium onion
2 garlic cloves
600g’s of stewing pork
1 chopped tin tomatoes
2 Carrots sliced
2 small potatoes cubed (Big rustic cubed)
Baby marrow sliced
1 Tablespoon curry
1/2 Teaspoon Smoked Paprika
1/2 Teaspoon Cayenne Pepper (Optional)
1 Teaspoon ground coriander
1/2 Teaspoon ground cumin

How To:
Finely chop your onions and fry together with your garlic and spices on a low heat, and once they’ve softened add your meat and coat with the onion, add salt, still on the low heat, cover and leave for thirty minutes. The meat will render (release) fat and it’s own liquid.
After thirty minutes, add your tomatoes,vegetables and 250ml water, cover and leave for an hour.
The liquid will reduce and thicken, adjust your seasoning and then you can serve with rice or bread.
